Headed by co-founder David McWilliam and his years of experience in the wine trade, Padstow gin's goal was to show true heritage for the region in which it's based, while still being a brilliant spirit.
David found a barley producer from Padstow, and ferments and distills the raw product to 96% (legally making it a 'neutral spirit'; many distilleries will purchase this spirit in from elsewhere, which makes for a large saving), and then re-distills the barley spirit to create the gin with traditional botanicals alongside sea buckthorn, black lovage (in the same family as angelica) and bay.
