The St. Agnes Wingletang Downs where the distillery is based are named after the 'Whins' of gorse and 'Tangs' of kelp that are found there. Gorse is a lesser used botanical in gin, but is known for providing floral, nutty and coconut like aromas.
Gorse flowers are hand-foraged and then distilled as a single botanical in a vacuum, which helps to preserve the delicate notes given by the flowers.
